Ingredients:
- 1 can of chickpeas (about €0.80)
- 1 can of chopped tomatoes (about €0.60)
- 1 small onion (about €0.20)
- 2 cloves of garlic (about €0.10)
- 1 teaspoon cumin (assume you have this in your pantry)
- 1 teaspoon smoked paprika (assume you have this in your pantry)
- 1/2 teaspoon chili flakes (adjust for your spice preference)
- Salt and pepper to taste
- 1 tablespoon olive oil or vegetable oil (about €0.10)
- Fresh parsley or coriander for garnish (optional, about €0.20)
Total Cost: Approximately €2.00 for two servings. If you already have spices, even less!
Method:
- Prep Work: Start by draining and rinsing the chickpeas. Chop the onion finely and mince the garlic.
- Sauté: In a medium saucepan or deep skillet, heat the oil over medium heat. Add the onion and cook until it’s soft and translucent, about 5 minutes. Add the garlic, cumin, smoked paprika, and chili flakes, stirring for another minute until fragrant.
- Build the Stew: Pour in the chopped tomatoes with their juice. Stir to combine with the spices. Let it simmer for about 5 minutes to reduce slightly and meld the flavors.
- Chickpeas In: Add the chickpeas to the pot. Fill the tomato can halfway with water. Swirl it around to get any remaining tomatoey goodness. Pour this into the stew. Season with salt and pepper.
- Simmer: Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes. The stew should thicken nicely; if it’s too thick, add more water.
- Garnish: If you have it, chop some fresh parsley or coriander. Sprinkle it on top just before serving for a pop of color and freshness.
Serving Suggestions:
